Pepper “Sausage” Pasta with Arugula

A classic combination of peppers and sausage, this quick and easy meal is a weeknight win. Try with vegan sausage or, skip the soy and try Barilla Protein+ Elbow Pasta instead (pictured).

Instructions
Step 1
Cook pasta according to package instructions. Drain, return to pot, drizzle with olive oil, and set aside with the lid on to keep the noodles warm.
Step 2
Meanwhile, heat olive oil over medium heat. Add peppers and onion and cook, stirring frequently, until softened, about 10-12 minutes. Season with salt and pepper. Add tomatoes and cook for about 3 minutes more.
Step 3
While the peppers and onions cook, heat olive oil in a separate pan (cast iron if you have one) on med-high. Add sliced vegan sausage and sauté about 3-4 minutes.
Step 4
Once the tomatoes are warmed through, add the pasta to the pepper mixture and stir to combine. Season with salt and pepper, and add a drizzle of olive oil. Remove from heat and stir in the arugula until slightly wilted. Add the vegan Parmesan, toss gently, and serve with sausage and additional Parmesan if desired.
