Instructions

Step 1
Begin with peeling and slicing your potatoes into chunky fries. Place in salted water and bring up to a boil. Let them simmer for 3-4 minutes and then drain. Cover with a cloth and let them steam dry.
Step 2
Meanwhile, dice the onion and finely chop the garlic. Mix the spices together and get a pan on a medium-high heat. Add olive oil and then sweat the onions down. Once translucent, add the garlic and the spices. Stir well for 30 seconds and then add the tomato paste. Cook for a further minute and then add the passata & chicken stock. Stir well and then add the mustard, sugar, Worcestershire sauce, honey and vinegar. Mix well and let it reduce to a nice thick sauce.
Step 3
In a seperate pan, add a half inch of vegetable oil and cook the sausages until crispy and brown all over. Leave in a warm oven whilst you prepare the fries.
Step 4
Heat 3/4 inches of vegetable oil to 180c/350 and fry until golden brown and crispy.
Step 5
You can either slice the sausage or serve whole. Salt the fries, top the sausages with the sauce and throw over a little extra curry powder. Enjoy!
