Creamy Jerk chicken carbonara

Super comfort food! We tried this in our local turtle bay and couldn’t get enough! So I attempted to make it at home and it’s turned out really well! Nice and simple - because I’m not a chef ha! But super effective and yummy! I added extra veg into mine to make it a bit healthier, but you don’t have too! You can also swap the double cream for crème fraiche too if you’d like it healthier!

Step 1
1. Boil your pasta 2. Fry your chicken and bacon (and pepper mushrooms if you’re having them!) in the jerk seasoning until cooked. 3. Add the cream and leave it to boil. Whisk in your two eggs yolkes to the sauce and add your grated cheese. Stir until it’s all melted in! (If your sauce is too thick; you can always add some pasta water a teaspoon at a time to loosen it up) 4. Add your spinach if your having it and stir until wilted 5. Add your pasta, mix and serve!
