Chipotle chicken pasta

This pasta recipe is on repeat at my house. My family’s favorite, you can definitely add in more veggies like asparagus, peas or spinach work with what you have.

Instructions

Step 1
1. Boil the pasta in salted water al dente, and set it aside. Don’t forget to reserve one cup of pasta water before straining.
Step 2
2. Cut the chicken breasts into bite size pieces, season the chicken with paprika, black pepper, garlic powder, salt, cumin and give it a good mix.

3. Put a skillet on high heat Add in the olive oil, then the chicken and cook for about 10 minutes.

4. Next add to the chicken the minced garlic, diced onion, diced bell peppers and sauté for about 5 minutes.
Step 5
5. Then add in the chipotle peppers in adobo sauce (give the chipotle peppers a dice before adding it in) the heavy cream, chicken broth, parmesan cheese and give it a good mix.
Step 6
6. Next add in the cooked pasta and the reserved a pasta water. Toss everything together and let it cook for about 2 more minutes and done.
Step 7
7. When serving garnish with fresh basil, Parmesan cheese and enjoy!!
