Chicken tikka skewers with spinach pilau

Instructions

Step 1
In a shallow bowl, mix the yogurt, lemon zest and juice, tikka curry powder, garlic and ginger until well combined. Season, add the chicken and stir to coat evenly. Cover and chill for 1 hour or overnight if you have time.

Preheat the grill to hot.
Step 3
Thread the chicken, peppers, onions, cherry tomatoes and courgettes on to eight skewer sticks, arrange on the foil-lined baking tray and grill for about 12 minutes on each side or until browned and cooked through.
Step 4
Meanwhile, rinse the rice under cold running water until water runs clear. Tip into a non-stick saucepan and add cardamom, cinnamon, turmeric, a large pinch of salt, carrots and 600ml of cold water. Bring to the boil, cover and simmer over the lowest heat possible for 10-12 minutes. Very quickly, lift the lid and add spinach, then cover again and set aside for 5 minutes. Fluff up the rice with a fork - the spinach should have wilted. Remove cinnamon stick and cardamon pods, if you like.
Step 5
Serve the skewers immediately with the pilau and extra yogurt sprinkled with a little tikka curry powder
