Instructions
Step 1
Mix the chicken, corn, beans and 5 oz of the enchilada sauce.
Step 2
Evenly divide mixture between the 12 tortillas.
Step 3
Pour a little sauce in the bottom of a casserole dish.
Step 4
Roll tortillas up and place seam side down in pan.
Step 5
Spread remaining sauce over top.
Step 6
Bake at 350° for 20-30 minutes.
Step 7
Sprinkle cheese over top and bake till melted, about 5 minutes.
Step 8
Top with diced tomatoes and avocado.
