Instructions
Step 1
Preheat oven to 200°C. Chop pumpkin into 1 cm cubes. Toss with seasoning mix and 1 Tbsp oil and roast for 40 minutes or until starting to caramelise on the edges.
Step 2
Meanwhile, slice onions and cook in a pan at med-low heat with oil and a good pinch of salt. Cook for 30-40 minutes until caramelised, stirring occasionally to make sure it's not sticking or burning.
Step 3
Grease a tart tin and line with shortcrust pastry. Make sure there are no holes or cracks in the pastry.
Step 4
To finish the onions, stir in the brown sugar, balsamic vinegar and wholegrain mustard.
Step 5
Fill the pastry case with spinach, pumpkin, onion, herbs, crumbled feta and cracked pepper.
Step 6
Whisk eggs, milk and a pinch of salt in another bowl. Mix well. Pour over filling.
Step 7
Bake for 40 minutes till set
