Instructions
Step 1
Preheat oven to 375F. Whisk flour, salt, and baking soda in a bowl.
Step 2
Cook 1 stick butter in a saucepan over medium heat, scraping the bottom of pan with a spatula until butter browns. Cube remaining 1/2 stick of butter, then add to brown butter to melt. Set aside to cool.
Step 3
Measure sugars (packing brown sugar down to measure) and mix in another bowl. Add in brown butter and mix.
Step 4
Add egg, egg yolks and sugar and whisk until sugar dissolves and mixture is smooth.
Step 5
Fold dry ingredients into wet ingredients. Crush pretzels and cut chocolate unto cubes, then add to dough mixture.
Step 6
Refrigerate dough for at least 2 hours. Then portion into ~2 tbsp dough balls and place on baking sheet (with cooking spray). Bake for about 8-10 minutes.
Step 7
Once removed from the oven, tap baking sheet down on countertop a few times to remove any air bubbles from cookies as they cool. Then top with flakey salt.
