Preheat the oven to 240C. Peel the potatoes and cut into small 1-Inch cubes. Rinse with cold water until it runs clear, drain and dry well. In a large bowl combine the potato chunks and chicken leg with the cajun seasoning, cayenne pepper, garlic powder, smoked paprika, all-purpose seasoning, thyme, olive oil, honey, salt and pepper. Add everything onto a baking tray and place into the oven. Immediately turn the heat down to 180C and bake for 40 minutes or until the chicken is cooked through and the potatoes are golden and crisp. Leave to rest for 5-10 minutes, plate and serve.
