Ingredients
6 servings
4chicken drumsticks
skin removed
4chicken thighs
skin removed
2 teaspoonscajun seasoning
¾ teaspoonsalt
2 tablespoonsvegetable oil
1can chicken broth
1 cuprice
uncooked
1green bell pepper
medium, coarsely chopped
1red bell pepper
medium, coarsely chopped
½ cupgreen onions
finely chopped
2cloves garlic
minced
½ teaspoondried thyme
¼ teaspoonground turmeric
Instructions
Step 1
Preheat oven to 350°F lightly coat 13X9-inch baking dish with nonstick cooking spray; set aside.
Step 2
Pat chicken dry.
Step 3
Sprinkle both sides of the chicken with Cajun seasoning and salt.
Step 4
Heat oil in large skillet over medium-high heat.
Step 5
Add chicken; cook 8 to 10 minutes or until browned on all sides. Transfer to plate.
Step 6
Add broth to skillet. Brinb to boil, scraping brown bits from bottom of the skillet.
Step 7
Add rice, bell peppers, green onions, garlic, thyme and turmeric. Stir well.
Step 8
Pour into prepared baking dish.
Step 9
Place browned chicken on top.
Step 10
Cover tightly with foil.
Step 11
Bake 1 hour or until chicken is cooked through.
