Mackerel, Courgette & Butterbean Salad
Remove the skin from the mackerel and flake into large pieces. Using a potato peeler, slice them courgette into ribbons and place in a large serving bowl. Add the butterbeans to the bowl with the parsley, chilli, lemon zest, mackerel and feta. Drizzle over the lemon juice and olive oil, and season with salt and pepper. Toss together before serving.
