Lentil tuna salad

Using canned lentils and tuna, this recipe is so easy to make with store cupboard essentials. It's cheap and full of protein – a great way to introduce more lentils into your diet.

Ingredients
4 servings

1 x 120gtinned fish
eg tuna in spring water, drained

1 x 400gcan lentils
drained and rinsed

2tomatoes
chopped

1 handfulrocket
optional

0.5shallot
or 2 spring onions, finely chopped

2eggs
medium, hard-boiled, peeled and chopped

chilli flakes
optional

2 Tbspolive oil

1 Tbspred wine vinegar
or white

freshly ground black pepper
to taste
Instructions
Step 1
In a salad bowl put the tuna, lentils, tomatoes, rocket (if using), shallots (or spring onions), eggs, chilli flakes (if using) and mix together.
Step 2
In another small bowl, mix together the olive oil, vinegar and black pepper.
Step 3
Drizzle the dressing over the salad and mix just before serving.
