Step 1
Preheat the oven to 180°C/350°F/Gas 4 and line a baking tray with baking parchment. Mix together the flours and cocoa and sift into a bowl.

Pour the sugar into the bowl and stir until thoroughly combined.

Add the diced butter to the bowl and rub in until the mixture resembles fine breadcrumbs.

Make a well in the centre of the mixture and pour in the syrup followed by the beaten egg. Use a large palette knife to combine the ingredients.

When the mixture becomes too stiff to mix with the palette knife, use your hands to bring the dough together.
Step 6
Roll out the dough between two sheets of baking parchment to 5mm (1/4in) thick. Chill for 30 minutes.
Step 7
Peel back the top layer of baking parchment. Cut out the cookies using a cookie cutter.
Step 8
Place the cookies on the baking tray and chill for 20 minutes. Bake for 14-18 minutes, until starting to darken slightly. Transfer to a wire rack to cool.
