Step 1
Allow the butter to reach room temperature to make it easier to mix.
Step 2
(optional) let the 40g of butter cook and lightly burn until the colour is brown and you can feel a nutty smell, reserve and let it cool to room temperature.
Step 3
Add the sugars and whisk it well to obtain a nice uniform cream
Step 4
Add all the other solids, baking powder, baking soda, salt and flour, and mix it well once again.
Step 5
Add the liquids, the noisette butter, the vanilla extract and the egg. 6. add the chopped chocolate - don't work too much the mix, just enough to make it homogeneous.
Step 6
Divide the dough into balls (of around 80g), rest them in the fridge for at least 1 hour (more is better), and freeze them if you like.
Step 7
Bake them at 180oC in preheated oven for about 12 minutes (a bit more if you make bigger balls)
