Instructions
Step 1
In a large bowl whisk together softened butter and sugar until well combined. Add eggs and whisk for another 3 minutes or until combined.
Step 2
Add sifted flour, baking powder and salt to the butter mixture. Using the spatula mix until just blended, then add chocolate chips and use your hands to mix them into the dough.
Step 3
Divide the dough into 9 equal parts and form each into a ball. Place them in a baking tray (the one that will fit your freezer), lined with the baking parchment.
Step 4
Roughly chop the chocolate eggs and press them into the top of the cookie dough balls.
Step 5
Cover the cookie dough balls with the cling film and freeze for at least 1 hour and up to overnight.

Preheat the oven to 180C

Place 3 cookie dough balls onto a baking tray, lined with parchment. (Make sure you leave plenty of room between them)
Step 8
Bake the cookies in batches for 15 minutes or until golden on the edges, but still, light brown in the middle. Let them cool for several minutes on a baking tray before transferring them to a cooling rack.
