Step 1
Scoop cookie butter onto a parchment lined baking sheet. Freeze for at minimum 1 hour.

Preheat to 350°F. Place the oven rack in the middle of the oven.

Brown butter in a skillet over medium-high heat, and let cool.

After about 5 minutes of cooling, mix together the brown butter, white granulated sugar, and brown sugar until fully incorporated.

Whisk in the egg and vanilla until the mixture looks glossy on top.

Fold in dry ingredients.

Fold in chopped chocolate.

Scoop a heap of cookie dough into your hand and roll in your palms until the dough is a smooth ball.

Using your thumb press into the center of the cookie creating a cozy pocket, and place a scoop of the frozen cookie butter in the center.

Pinch and mold the sides of the cookie dough to cover the cookie butter. Roll into a ball again.

Place on a parchment lined baking sheet and bake for 11-12 minutes or until the edges are set.
