2 blocksextra firm tofu
or firm

2 cupsfrozen cut green beans

3 cupsfrozen broccoli

4 Tbspolive oil

salt
to taste

For the sauce
Instructions
Step 1
1 preheat your air fryer

Step 2
Open and drain tofu, then press. If you don't have a tofu press, like me, I recommend slicing each tofu block into 6-8 slabs, and laying them flat on a clean kitchen towel between two cutting boards with a pot or other weight on top while you assemble the other ingredients.


Step 3
While the tofu is draining, partially thaw the green beans in microwave, then toss with c. 1 tbsp olive oil and salt and pepper to taste, repeat with broccoli, cutting into bitesize florets once softened if desired




Step 4
Put the oiled and seasoned veggies into the air fryer, cube the tofu and use the remaining oil plus salt and pepper to taste and add it as well.

Step 5
Once everything is in the air fryer, either juice 6 oranges or measure out about 2 cups of orange juice, and put into a saucepan or pot over medium low heat. Add vinegar, soy sauce, sesame oil, and baking soda if desired, plus orange zest and either microplaned or dry ginger









Step 6
Bring sauce to a low simmer, and taste test. If orange flavor is weak, add marmalade or orange curd. Add salt if needed.
Step 7
Once sauce flavor is balanced, whisk cornstarch into cool water, and slowly whisk the slurry into the sauce until clear, glossy, and thickened. Turn burner to low or off.
Step 8
Once tofu is crispy and veggies cooked with slight char/caramelization from air fryer, remove and toss with the sauce. Serve hot over rice
