Instructions

Step 1
rinse potatoes in a strainer and bring pot of water to a boil with 1 tbsp salt. This will take about 25 minutes.
Step 2
Drain the potatoes and let them dry.
Step 3
While potatoes are drying, chop thyme and rosemary and place into a bowl with 1/3 cup grated parmesan.
Step 4
Place potatoes on a baking sheet and smash with a cup or potato masher. Allow potatoes to steam for another couple minutes before brushing with olive oil and sprinkling with salt + pepper.
Step 5
Bake at 400 for 45 minutes.
Step 6
Once finished, take potatoes out and brush on melted butter. Sprinkle with parmesan + herb mixture. Finish off in the oven at 400 for 5-6 minutes or until desired crispiness.
