There's so much flavour in this it should really be illegal. By grating the courgette and using fresh pasta, it's ready incredibly quickly. If you can't find fresh linguini you can use the dried stuff instead.

Instructions
Step 1
Heat the oil in a large frying pan over a medium to high heat and add the garlic and the chilli flakes.
Step 2
Stir for 30 seconds and then throw in the grated courgette along with a generous pinch of salt and pepper.
Step 3
Fry for 2 minutes, or until the courgette begins to soften and some of the liquid has evaporated.
Step 4
Stir in the prawns and watch until they turn pink and are cooked through.
Step 5
Bring a large saucepan of water to the boil.
Step 6
Drop the linguini into the boiling water.
Step 7
Cook the pasta according to the packet instructions (about 90 seconds) before draining in a colander and chucking into the pan with the rest of the ingredients.
Step 8
Off the heat, toss the pasta with the cooked courgettes and prawns, and add the parsley along with a touch more salt and pepper if you think it needs it.
Step 9
Serve up the delicious pasta with a final squeeze of lemon juice.
