Ingredients

1 x 28 ozcan crushed tomatoes
preferably fire-roasted tomatoes
3 cupsblack beans
cooked, without their cooking liquid or drained and rinsed canned beans
2 cupsvegetable broth
2sweet potatoes
medium, peeled and cut into cubes
1 cupred kidney beans
cooked and drained, or drained and rinsed canned red kidney beans
1 cupyellow onion
medium, or white, chopped
2red potatoes
medium, cut into cubes
2 Tbsminced garlic
2 tspchili powder
1 tspground cumin
½ tspsalt
1red bell pepper
cored and diced, for garnish
scallions
finely chopped, for garnish
fresh cilantro leaves
finely chopped, for garnish
Instructions
Step 1
Stir the tomatoes, black beans, broth, sweet potatoes, kidney beans, onion, red potatoes, garlic, chili powder, cumin, and salt in a 5- to 6-quarter slow cooker. Cover and cook on high for 4 hours or low for 8 hours.
Step 2
Ladle into bowls and garnish with bell pepper, scallions, and cilantro.
