Ingredients
6 servings

2 cupsbean mix
or Hurts bean soup mix

Smoked ham bone
or smoked 2 hocks

3 quartswater

1 poundcanned diced tomatoes

1yellow onion
large, chopped

1green bell pepper
large, chopped

1 cupcelery
chopped

1clove garlic
minced

1 tblsplemon juice

1 tblspsugar

2 TblspWorcestershire Sauce

2 tspsalt

pepper
to taste

For the bean mix
Instructions
Step 1
Prepare bean mixture and remove 2 cups. Keep remaining beans to make soup in the future.
Step 2
In large soup kettle, combine beans with ham hocks or ham bone and water. Bring to a gentle boil, then simmer 2 hours. Broth may look black at this point, but once the other ingredients are added, it will change color.
Step 3
Add all remaining ingredients except cheese and simmer another 2 to 3 hours or until beans are tender.
Step 4
Garnish with cheese and serve hot with bread.
