Instructions
Step 1
Preheat oven to 400°
Step 2
In a 12" cast iron pan melt butter over med-high heat. Add ham; cook until browned, about 5 min.
Step 3
Add onion, garlic, and rosemary; cover and cook, stirring occasionally until tender, about 8 min.
Step 4
Stir in flour, cook for 2 min.
Step 5
Gradually whisk in milk; bring to a simmer.
Step 6
Gradually whisk in 1 1/2 cups cheese until melted.
Step 7
Stir in cooked pasta, spinach, salt and pepper.
Step 8
Sprinkle on remaining 1/2 cup cheese, and bake until golden brown and bubbly, about 25 min.
Step 9
Garnish with rosemary if desired.
