Instructions
Step 1
In a large pot add the stock and brig to the boil with the thyme and garlic.

Place the chicken in the stock and simmer for 15 minuets

Remove the chicken from the stock and allow to cool to room temperature, save the stock for gravy or delicious chicken broth.

Once cooled rub with oil and season with salt & pepper (or your favourite seasoning) and roast in a hot oven for 20 minutes
