Courgette flowers with goats cheese and thyme honey

Instructions
Step 1
Mash soft goats cheese with fresh thyme and season with salt.
Step 2
Gently stuff the courgette flowers with the goats cheese and twist at the top to close.
Step 3
Make a batter with sparkling water and plain flour until it's the consistency of pancake mix. Season with salt.
Step 4
Heat your oil to 180c, dip a flower into the batter and gently place into the oil.
Step 5
Cook until crisp, turning over from time to time (around 2 mins)
Step 6
Remove from the oil using a slotted spoon and place onto kitchen towel to absorb any excess oil.
Step 7
Serve with a little drizzle of honey and eat in the sunshine.
