Ingredients
3 servings
250gorzo pasta
1can chopped tomatoes
2cloves garlic
crushed
1onion
finely chopped
1 stickcelery
finely chopped
1bell pepper
diced
1courgette
diced
80gmushrooms
quartered
1 tablespoonmixed herbs
150gfresh mozzarella
chopped into cubes
75ggrated hard cheese
1vegetable stock cube
1 tablespoonolive oil
500mlwater
1 tablespoontomato puree
Instructions
Step 1
Ideally in a heavy pan (which can be put in an oven, if not can put in an oven proof container for baking) add the oil with the mushrooms to fry off for about 5 minutes

Step 2
Remove the mushrooms and add the onion, pepper, celery, garlic and courgette, and a little more oil if need and saute for 3-4 minutes, stirring occasionally.

Add the herbs and tomato puree and stir through, cook for another couple of minutes.
Step 4
Add the tomato, water and stock cube and bring to the boil.
Step 5
Add the orzo and simmer for 3-4 minutes.
Step 6
Add in the mozzarella and stir through.
Step 7
If it needs transferring to an oven proof dish do this now, before adding the grated cheese. Bake in the oven for 20-25 minutes at 170oC.
