Gnocchi in a creamy roasted red pepper sauce with hot Italian sausage

Ingredients
4 servings
1 lbground hot Italian sausage
1 packagegnocchi
ready to cook
8 ozroasted red peppers
jarred
4 ozcream cheese
softened
1shallot
roughly sliced
3garlic cloves
roughly sliced
¼ tspcrushed red pepper flakes
2 Tbspolive oil
½ cupgrated parmesan
1 tspsalt
black pepper
to taste
1 tspgarlic powder
1 tsplemon juice
1 ½ Tbspfresh basil
chopped, or lightly dried
Instructions
Step 1
Heat 1/2 tbsp of olive oil over medium heat and brown Italian sausage.
Step 2
Sauté shallot, garlic cloves, and crushed red pepper flakes in 1/2 tbsp of olive oil until soft and fragrant.
Step 3
Blend roasted peppers, sautéed garlic, shallot, crushed pepper, cream cheese, parmesan, seasonings, basil, lemon juice, and remaining olive oil in a food processor.
Step 4
Stir sauce into browned Italian sausage and reduce heat to a low simmer.
Step 5
Bring salted water to a boil, and cook gnocchi to package directions (about 3 minutes). Gnocchi is done when it rises to the surface of the water.
Step 6
Drain gnocchi and gently fold into sauce.
Step 7
Top with extra parmesan and serve.
