Ingredients
16 servings
1 cuprice flour
1 ⅓ cupsoat flour
⅔ cupbrown sugar
2 teaspoonsbaking powder
½ teaspoonsalt
1 teaspooncinnamon
¾ cupoat milk
⅓ cupvegetable oil
1egg

1 teaspoonvanilla
12 teaspoonsjam
or preserves
FOR THE TOPPING:
Instructions
Step 1
Preheat oven to 350 F. Grease 12 cavities of a standard muffin pan.
Step 2
Stir together the flour, sugar, baking powder, cinnamon and salt.
Step 3
Make a well in the center of the mixture.
Step 4
In a separate bowl, mix the milk, oil, egg, and vanilla.
Step 5
Add to the flour mixture, and stir just until combined.
Step 6
Fill each muffin cup about 2/3 full with batter, leaving about 6 tablespoons of batter in the bowl.
Step 7
Place about 1 teaspoon of jam in the center of each filled muffin cup.
Step 8
Top with just enough of the reserved batter to almost cover the jam.
Step 9
Bake for 16 to 18 minutes, or until the edges are browned and the muffins are set. Set aside to cool slightly.
TO MAKE THE TOPPING:
Step 10
Combine the sugar and cinnamon in a shallow bowl.
Step 11
Brush the melted butter over the tops of each muffin. Dip each muffin, top-side down. into the cinnamon-sugar to coat.
NOTE:
Step 12
If you prefer, you can brush butter completely over the muffins and then roll in cinnamon-sugar. Just double the amount of butter and cinnamon-sugar so you'll have enough.
