Ingredients
6 servings

1 cupchicken breast
grillled

½ cupred cabbage
shedded finely

¼ cupred onion
finely chopped

basil
finely chopped

¼ cupsweetcorn

2salad tomatoes
diced

¼ cupcorriander
chopped

0.5avocado
sliced

1 cupbuckwheat flour

1 ½ cupswater
warm

salt

pepper

1red chilli
sliced

2 Tbspgreek yoghurt

¼ cupjerk seasoning

1clove of garlic

2 cupslettuce
finely sliced
Instructions
Step 1
Marinate the chicken in jerk seasoning for 30 mins or more.
Step 2
Mix water, buckwheat flour and salt into a medium-thick pancake batter & set aside for 10-15 minutes.
Step 3
Prepare all the chopped ingredients.
Step 4
Make salsa by mixing chopped tomatoes, sweetcorn, finely diced onion, chilli, garlic, basil & corriander.
Step 5
Finely slice lettuce and cabbage. Place all chopped ingredients aside.
Step 6
Cook the chicken - grill, griddle or bake if using higher quantities. When cooked leave to cool, then slice into thin strips or cubes.
Step 7
Make the buckwheat wrap by dry frying in a non-stick 20cm pan as you would a pancake.
Step 8
Assemble your wrap by adding the lettuce, salsa, avocado and sliced chicken. You can add greek yoghurt or sour cream or any other toppings you like.
