12 ozhot italian sausage links
casings removed
2 x 8 ozcream cheese
packages, at room temperature
1 cupsour cream
4 ozsharp cheddar cheese
grated
2 cupsfrozen sweet corn
thawed and drained
1 x 14 ozcan fire roasted diced tomatoes with green chiles
1 x 4 ozcan of diced hatch green chiles
½ cupfresh jalapeno peppers
diced
½ cupgreen onions
sliced
1 tspblack pepper
cayenne pepper
Instructions
Step 1
preheat oven to 425 F
Step 2
place sausages in a dry pan over medium heat until they start to sizzle. Use a spoon or flat wooden spatula to break them up as they cook. Continue to cook until browned and crumbly (10-12 minutes) Remove from the heat and drain grease if needed
Step 3
Combine cream cheese, sour cream, 4 oz grated cheese, thawed corn, cooked sausage, fire-roasted tomatoes with chiles, hatch chiles, jalapeno peppers, green onions, salt, pepper, and cayenne in a large mixing bowl. Mix until combined thoroughly, then transfer into baking dish and smooth out the top - sprinkle remaining cheese and cayenne.
Step 4
place baking dish on a sheet pan and bake in the center of the oven until the cheese is melted and the dip os bubbling around the outside (30 minutes)
Step 5
sprinkle green onions over top for serving
