Mike's Poor Man Meal

I saw a lady cooking what she called the poor man meal. She used mainly potatoes and hot dogs. Here's my "a little wealthier" version. I use some squash as well as Johnsonville Smoked Brats to add some value. This is a family favorite, I like it with ketchup, but my family prefers it as it is.

Step 1
Dice all of the vegetables and put them in bowls to add them to the pan.
Step 2
Cut the Brats into bite-sized coins and place in a bowl to add to the pan later
Step 3
Add the olive oil to the large frying pan you have (needs to be able to contain all of the ingredients) and add a few pieces of the diced onion to bring pan up to temperature, when pieces start bubbling add entire diced onion and all of the diced potatoes.

Add salt, parsley flakes, garlic powder, and basil to taste. You probably need more than you think.
Step 5
Let this fry for a little while, stirring with the spoon.
Step 6
Add the green onions, zucchini, and yellow squash. Stir well to mix evenly.
Step 7
Cook on moderate heat with a lid on the pan (it helps potatoes to cook more quickly with the lid). Stir regularly to prevent burning and sticking to the pan.
