Instructions

Step 1
Preheat the oven/air fryer to 180°C

Toss the cubed sweet potatoes with the oil, paprika, salt, and pepper till evenly coated.

Step 3
Spread the potatoes on a large baking tray and place in the oven (or an air fryer) for 25-30 minutes, tossing them midway, until tender and slightly crispy.
Step 4
Optionally: toss the chickpeas with some oil, salt and pepper and spread them on another baking tray and roast for 25-30 minutes till crispy.

Whisk together the dressing ingredients in a bowl.

Add the chopped coriander and onions to the dressing and set aside.

When the sweet potatoes are done, let them cool for 10 minutes, then add to the dressing bowl and toss everything together till well combined.
