Ingredients
6 servings
900gground turkey
1onion
small, minced
4 clovesgarlic
minced
1 tspchili powder
1 tablespoongarlic powder
1 tablespoononion powder
1 tablespooncumin
2bay leaves
1 tsporegano
salt
to taste
pepper
½ tspolive oil
or cooking oil spray
15 ozcan of navy beans
400gcanellini beans
100gcan of green chiles
400gcan of pumpkin puree
2 cupschicken broth
400gcan of fire roasted corn
Instructions
Step 1
1. Turn your Instant Pot on to sauté and spray with cooking oil/add your oil and sauté onion and garlic for about 2 mins until fragrant. Add your ground turkey and season the meat with 2 tablespoons garlic powder, onion powder, and cumin. Add salt and pepper to taste.
Step 2
2. Once the meat is cooked, add the beans, green chilis, pumpkin, bay leaves, and corn to the pot. Adjust seasonings to taste (I ended up adding more salt/pepper, more cumin, more chili powder... pretty much more of everything to get it to the right seasoning flavors I wanted).
Step 3
3. Cover and cook on high pressure for 25 min. Natural release.
Step 4
4. Remove bay leaves and adjust seasonings one more time and enjoy! I added cilantro to top mine but you can also add sour cream, tortilla chips, cheese, or whatever! Feel free to also serve it with cornbread.
Step 5
If on stove, simmer everything for 1-2 hours first
