Chocolate ganache cake

A indulgent and rich chocolate cake. An almost brownie like cake, creamy buttery chocolate filling, and the most beautiful chocolate ganache glazing.
To finish it off, and cut through the sweetness, fresh and fruity medley of forest fruits on top. Blueberries, raspberries, strawberries, grapes and glaced cherries for a surprise!
To follow the recipe, you’ll have to double the cake ingredients and make the cake twice!

coarsely chopped

Ganache

Instructions
Step 1
- Pre-heat oven to 180C.

- Pour boiling water over chocolate and butter. Stir until smooth and leave to cool slightly.

- In a different bowl, mix sugar, milk, egg and vanilla extract. Whisk in the chocolate mix.

- Combine flower, baking soda and salt well before whisking it into the chocolate mixture, make sure everything is incorporated well!

- Transfer into a 8-inch round baking pan coated with cooking spray or butter. Bake until a toothpick inserted in centre comes out clean. (Mine took about 25min)

- Leave to cool for about 10 minutes before removing from pan to a wire rack to cool completely.

Now repeat step 1-6 completely and leave both cakes to cool down.
Butter cream

Beat butter until creamy

Add sugar, cocoa, cream, salt and vanilla

Beat on low for 30 sec and then high until fluffy and creamy

Use cocoa/ sugar or cream to thicken or thinner the mixture

Now spread the mixture over one side of the cake and make a sandwich with the other one on top.
Ganache

- For ganache, bring cream just to a boil and pour over the chocolate. Whisk until smooth and leave to cool until slightly thickened. If you wish the ganache to be more fluid in order to pour over the cake, add a bit more cream.

Now pour over the cake and makes sure everywhere is covered properly.

To finish off the cake, place the fruits over the top and leave in the fridge until ready to serve.
