Filling
300gpotatoes
scrubbed and diced
1yellow onion
diced
0.5green pepper
diced
0.5 clovegarlic
minced
180gbaby spinach

Instructions
Boil potatoes
Step 1
In a pot, boil potatoes, covered, until almost tender when pierced with a fork, about 8 minutes.
Step 2
Remove from heat and let cool.
Sauté aromatics
Step 3
Meanwhile, in a saucepan over medium heat, sauté onion and peppers, stirring frequently, until vegetables start to soften, about 10 minutes. Add water 1 to 2 tablespoons at a time as needed, to keep vegetables from sticking.
Step 4
Add garlic and cook until fragrant, about 1 minute more.
Make filling
Step 5
Add spinach and 2 tablespoons water to aromatics. Cover pot and cook until spinach has wilted, about 4 minutes. Add steamed potatoes and cook until heated through, 2 to 3 minutes. Season with salt and pepper to taste.
Warm tortillas
Step 6
Damp tortillas with water on both sides and heat them for 30 seconds in the microwave.
Assemble & serve
Step 7
Place 1/4 cup of filling in center of each tortilla. Scatter coriander over filling, if desired. Serve immediately.
