Instructions

Step 1
Add onion & carrots to pot with oil and sautee until onions are soft.
Step 2
Add spices (not s&p) and cook 2 min.
Step 3
Add broth, lentils & tomatoes, raising heat to high.
Step 4
Once boiled, simmer until lentils are tender (20 min).
Step 5
Add beans, corn, garlic, bay leaf, & coriander and cook 20 min. Add a little extra stock broth if needed.
