Simple Gelato Base Recipe

Instructions

Step 1
Whisk whole milk with flavor ingredients (see at the bottom) on very low heat for 5 minutes - DO NOT let it boil.
Step 2
In a separate glass bowl, whip the egg yolks and ½ of the sugar until fluffy and creamy.
Step 3
Take the milk mixture off of the heat. Add a small amount to the egg cream while whipping to avoid “cooking” the eggs in the egg cream. Once mixed, add the remaining amount and mix well.
Step 4
Transfer the combined mixture to the saucepan and cook for 5 more minutes while stirring with a wooden spoon. The mixture must reach 185F.
Step 5
Turn off the heat and add the heavy whipping cream. Mix well.
Step 6
Add mixture to an ice cream maker. Add solid ingredients if desired (e.g. chocolate chips, nuts, etc.). Run for 20 minutes (or according to the maker instructions) then place in freezer overnight.
Step 7
Flavor Ingredient Suggestions Chocolate - 50g cocoa powder + 100g 70% dark chocolate, mix cocoa powder into milk and ½ of the sugar, heat per step 1 above then add chocolate to melt together.
