Ingredients

Cooking oil spray
1 tablespoononion
diced
¼ cupcanned black beans
preferably low sodium or no-salt- added, drained and rinsed
1egg
scrambled
1whole-wheat tortilla
about 8 inches in diameter
2 tablespoonssalsa
preferably with no more than 85 mg sodium per 2 tablespoons
3 tablespoonsavocado
mashed
½ cupplain nonfat yogurt
or low-fat, regular or Greek
Instructions
Step 1
Place a large heavy bottom skillet over medium heat. Spray with cooking spray and add onion. Cook, stirring constantly, for 2 minutes.
Step 2
2. Reduce heat to low and add beans and egg. Cook, stirring constantly, until eggs are cooked, about 3 minutes.
Step 3
3. Place egg mixture on tortilla, top with salsa, avocado and yogurt.
Step 4
Roll tortilla and serve
