Instructions

Step 1
Saute peppers and onions until soft. Add two eggs and scramble until cooked. Once cooked, set aside in a bowl. Add cooked pork sausage and mix until combined.

Add 1/4 a tsp of avocado oil to a skillet on medium heat. Once hot, fry both sides of the first tortilla.
Step 3
Place on baking sheet. Add some shredded cheese and a fourth of the mixture. Fold and press shut. Repeat with all four tacos.

Cook at 375 for 5-8 minutes or until brown!
