Instructions

Step 1
Dice onion finely. Saute with a little oil in your soup pot. Once they are cooked, add minced garlic and cook (this cooks quickly). Then add tomato paste and let cook until the sugar in the paste caramelizes and it's a deeper color.
Step 2
Add in canned crushed tomatoes and about a teaspoon of Jane's Crazy Salt. Let simmer for a few minutes.
Step 3
Puree in a blender to desired consistency. Add back to pot.

Add in chicken broth & cream (do not use regular milk- it will curdle)
Step 5
Add in 1 teaspoon of brown sugar and one stick of butter. I think you could do with less butter and do the sugar to taste and add more if needed. Adjust seasonings at this point. Let everything heat up and serve. This is a really quick soup to make.

Butter both sides of the bread and put on baking sheet. I made half of my sandwiches with ham so to I added a little honey mustard to those bread slices.
Step 8
Top bread slices with the shredded melty and strong flavored cheeses. Save the parmesan cheese for the outside of the bread later. I also added less cheese to the slices with the honey mustard since I was going to be adding the ham to those.
Step 9
Broil in oven until melted. I would use the second rack from the top because the top rack melted the cheese and burnt the bread edges in one minute. You are just melting the cheese, not toasting the bread. It goes quickly!
Step 10
Once cheese has melted, make the bread into sandwiches. Add sliced ham to the honey mustard slices. Fry in a pan to toast. Once bread is just browning, add parmesan cheese to the outside of the bread and toast. Flip and repeat. You want the parmesan to be nicely brown and crispy.
Step 11
Cut sandwiches, serve with hot soup. Delicious with sliced apples on the side.

Note: I used expensive cheeses like in the video and 4 different types. I don't think it was needed. Next time I will get just 2 decent cheeses and the parmesan or Asiago for the outside, like I put in the recipe. I don't think the $40 for the cheese was worth it like in the video.
