Instructions

For the tomato soup

Step 1
In a large pot over medium heat at the olive oil and allow to get hot
Step 2
Add the onion, carrots sauté for a few minutes; season as you go with salt and pepper to taste .
Step 3
Add the celery, ginger and garlic. Once fragrant add the roasted bell pepper, tomato paste, sun dried tomatoes and the can diced tomatoes.
Step 4
Lower the heat to low; Add the chicken stock followed by the basil and thyme. Season with salt and pepper, chicken bouillon, and oregano.

Using a food processor, ( blender , immersion blender ect.) blend until smooth or to your desired consistency. I like mine just a tiny bit chunky but not too smooth .

Add back to the pot on low heat , add the half & half and the freshly grated parmesan. Mix in until well incorporated. And set aside

For the grilled cheese

Step 7
In bowl add the softened butter, the garlic powder and onion powder. Mix then apply to the the sour dough bread
Step 8
Place the cheeses one side then close it with a top slice. On medium heat using a skillet, place the grilled cheese sandwich down

Brown on each side for about 3 minutes or until the cheese start to melt .

Serve with the tomato soup and enjoy !
