Ingredients

4stalks celery
chopped

2onions
large, chopped

4cloves garlic
minced

15 ozroasted red peppers

32 ozchicken broth

2 x 15 ozcannellini beans
cans, rinsed and drained

28 ozcan Italian-style diced tomatoes

14 ozcan artichoke hearts
rinsed and drained

8 cupsSwiss chard
or spinach, chopped

20 ozcheese tortellini
pkg fresh or frozen

¼ cupgrated parmesan cheese
Instructions
Step 1
Add celery onions, garlic, red peppers, chicken broth, cannellini beans, diced tomatoes and artichoke hearts to slow cooker.
Step 2
Cover and cook on low 7-8 hours or high 4-5 hours
Step 3
Add in Swiss chard or spinach and tortellini and cook an additional 8-12 minutes on high, until pasta is Al dente.
Step 4
Serve with Parmesan cheese, if desired
