Instructions

Step 1
Cut pork into bite sized pieces, mix with the marinade ingredients and set aside for 3 hours minimum.

Step 2
Heat oven to 200 degrees, cook the marinated pork for 30 minutes or until meat has browned
Step 3
Transfer pork to a pan, poor over coconut milk and add lemongrass. Bring to simmer, cover and cook for for 10-12 minutes.
Step 4
Stir in chopped chilli and coriander and discard lemongrass.
