Instructions

Step 1
Finely dice onion then sauté in a pan until a little color forms . Then add diced carrot and leek and sweat down for two minutes . Remove from the pan then add in 2 large diced chicken breasts and season with salt and pepper and when the chicken has some color add back in the veggies to the pan

Step 2
Add garlic then add butter and melt down . Sprinkle in the flour and stir it in . Now add the chicken broth and milk and some thyme as much as you like. Let it thicken and bubble then adjust the seasoning and add more salt and pepper as needed .

Now preheat the oven to 200 c ( I use fan oven setting for puff pastry ) take out the puff pastry and fold it over on top of itself and roll it . I’m doing this to make the dough thicker . Now get 4 ramekins and cut out circles slightly larger than the ramekins . Now grease the tops of the ramekins and divide the filling . Place the dough circles on top pinch them around the sides of the ramekin and pierce the middle a few times with a knife to leave the steam escape while cooking . Brush the pastry with some milk and Bake for around 18-20 minutes or until golden
