Perfect for quick dinner, picnicks and bring-to-work lunch.
You can prepare more rosted veggies and assemble it throughout the week! Warm, cold - perfect eather way!

Step 1
Preheat the oven to 200 C.

Add the bite size cut veggies to the big baking sheet, drizzle with olive oil, salt pepper and mix well. Put in oven and bake for around 30 minutes.

Prefferably on a grill pan - on thin lyer of olive oil or a cooking spra grill halloumi cheese slices untill they get nice colour, for around 3-5 min.

Step 4
Spread a thin layer of hummus on tortilla.
Step 5
Add few spoons of grilled vegetables, few halloumy slices and some arrugula.
Step 6
Wrap in a burrito. Now, you can eat it like this, it’s perfectly delicious, or you can go extra step and grill your burrito for few minutes on grill pan to get thise nice lines.
