Ingredients
4 servings
1 tablespoonolive oil
1onion
large, chopped
1green bell pepper
chopped
½ teaspoonsminced garlic
0.5 poundboneless skinless chicken thighs
cut into 1-inch pieces
1 x 14.5 ouncescan stewed tomatoes
0.5 poundsmoked sausage
fully cooked, or kielbasa, thinly sliced
¾ teaspoonhot pepper sauce
or to taste
2 ¼ cupsbuttermilk baking mix
¾ teaspoondried thyme
⅛ teaspoonblack pepper
⅔ cupmilk
Instructions
Step 1
Preheat oven to 450F
Step 2
Heat oil in medium oven proof skillet over medium-high heat until hot.
Step 3
Add onion, bell pepper and garlic.
Step 4
Cook 3 minutes, stirring occasionally.
Step 5
Add chicken and cook 1 minute.
Step 6
Add tomatoes, sausage and hot pepper sauce
Step 7
Cook, uncovered, over medium- low heat 5 minutes.
Step 8
While chicken is cooking, combine baking mix, thyme and black pepper
Step 9
Stir in milk.
Step 10
Drop batter by heaping tablespoonfuls in mounds over chicken mixture.
Step 11
Bake 14 minutes or until biscuits are golden brown and cooked through and chicken mixture is bubbly.
