This is how I make kefir at home. Use the last of 1 batch to start the 2nd and so on. It can be consumed as-is, mixed with fruit or as an ingredient in a recipe. Tastes like drinking plain yogurt.

To start for the first time, get store-bought kefir. Future batches will use kefir from the prior batch.

Pour out 2/3 c of milk from the half gallon jug. Drink it.

Pour the kefir into the milk jug.

Cap the milk jug & gently shake to mix. Label the jug and leave it out at room temperature for 12-24 hours. Pour out small tastes throughout and stop when it tastes best to you.

Place milk jug in refrigerator after the 12-24 hours is over. The kefir will sour slightly more after 2 to 3 days in the fridge. Use within 2 weeks. Reserve the last 2/3 cup and use it to start the next half gallon. If anything begins to taste spoiled or wrong, discard and start again with new milk & new kefir.
