Instructions
Step 1
Boil the potatoes for 20 minutes and let them cool down until they are lukewarm.
Step 2
Peel and slice the potatoes.
Step 3
Chop the onion finely.
Step 4
Prepare the meat or vegetable broth.
Step 5
Sauté the chopped onions in a pan with oil and add the broth.
Step 6
Bring to a boil and remove from heat. Mix in vinegar, mustard, salt, and pepper.
Step 7
Let the sauce cool down for 10 minutes. Then combine with the potatoes.
Step 8
Let it marinate for 1 hour before serving.
Step 9
Add freshly chopped parsley. If you like, add another 3 tablespoons of oil. I also added some fresh onions because I like to smell like onions.
