Instructions

Step 1
In a small mixing bowl combine 1/4 c olive oil, 1 tbsp dry ranch seasoning, 1/2 tsp black pepper, and 1 tbsp paprika. Wisk together and set aside
Step 2
In a large mixing bowl combine 5 medium sized potatoes cubed, 2 chicken breast cut into bite size pieces, 1 onion diced and the olive oil mixture.
Step 3
Mix together and pour into the casserole dish.
Step 4
Bake for 45 minutes uncovered
Step 5
When done sprinkle 2 cups shredded cheddar cheese on top and 1 cup diced , cooked bacon. Cook uncovered another 10 minutes.
Step 6
Garnish with sliced scallions and sour cream
