Instructions

Step 1
Heat olive oil in a large pot over medium high heat.
Step 2
Saute onions for 3-5 minutes until they begin to colour and turn translucent - season with salt and pepper.
Step 3
Add minced garlic and cook for 1 minute more being careful not to brown garlic
Step 4
Add celery and carrot. Cook for 3 minutes. Season with a little more salt.
Step 5
Add zucchini, tomates, stock, Italian seasoning, parmesan rind and a few grinds of fresh pepper.
Step 6
Bring to a boil then reduce to a simmer for 30 minutes
Step 7
Add tortellini and simmer for an additional 15 minutes
Step 8
Serve with fresh bread
