Sausage and Peppers
Substitutes:
Sausage = hot dogs = cooked chicken.
Wine = beer = stock. If not using wine, add 2 Tbsp of vinegar for acidity.
Tomato paste = sauce = crushed tomatoes.
Bell peppers = eggplant = zucchini.
Peperoncini Piccanti = banana peppers = any pickled peppers = pepper flakes.

Ingredients

1red onion
large, sliced
3bell peppers
assorted, thinly sliced
1 bulbfennel
trimmed and sliced
2banana peppers
hot, sliced
3cloves garlic
minced
hot chili pepper
2 Tbsptomato paste
salt
to taste
pepper
to taste
½ tspred pepper flakes
1 tsporegano

Instructions
Sausage
Step 1
Slice the sausages and brown them in oil. Set aside.
Peppers
Step 2
Add the onion to the pan and sauté until translucent.
Step 3
Add the peppers, fennel and garlic and cook on high heat until slightly softened (mimicking stir-fry).
Step 4
Add salt, pepper, oregano, red pepper flakes, Peperoncini Piccanti, and tomato paste and cook, stirring, for a few more minutes.
Finish
Step 5
Stir in ½ cup wine; reduce heat to medium, cover and cook until the vegetables are tender- about 5 minutes.
Step 6
Add the sausages and cook through - another 3 to 4 minutes.
